The V60 holds the coffee bed in a cone rather than a flat basket, so water passes through more ground coffee on its way down to the apex. The paper does the rest of the work: it holds back fines and most of the coffee oils, which is what gives a paper-filtered brew its clarity in the cup.
Choose the size that matches your dripper. A 01 paper sits in the 01 dripper, 02 in the 02, 03 in the 03. The sizes are not interchangeable, because a smaller paper leaves part of the cone unlined.
Rinse the paper before you brew. Set it in the dripper, pour hot water through until it is fully wet, then pour that water away. This rinses out the papery taste and preheats the dripper and the vessel underneath at the same time.
