Roast Profile: Filter
A Pacamara from Finca Los Angeles in Apaneca, El Salvador, processed as a carefully controlled anaerobic natural and roasted for filter. In the cup, expect ripe cherry and blackberry, a Biscoff-like spiced biscuit sweetness and dark-chocolate depth. There’s a tidy, winey acidity and a clean, lingering finish.
What we love: the way Pacamara’s generous texture meets real clarity from the processing. It’s fruit-forward without slipping into boozy or overripe notes; instead you get jammy red fruit, gentle clove-like spice and a long cocoa-led aftertaste that’s immensely satisfying on filter.
Finca Los Angeles is a young, 16-hectare project from Los Naranjos Coffee, planted almost entirely to Pacamara on unusually flat terrain. Ripe cherry is selected using Brix measurements, then fermented whole in sealed tanks under close pH monitoring before a long, slow dry on raised beds. The farm placed 5th in El Salvador’s Cup of Excellence in 2020, and that same focus on precision shows here in the cup’s cleanliness and balance.
We’ve profiled this lot to showcase sweetness and structure on filter: clear, expressive fruit up front, a syrupy mid-palate and a neat, chocolatey finish. If you enjoy the character of Pacamara and modern, clean naturals, this is a lovely example.
