This lot comes from the Aguilera Brothers and their micromill in Los Robles de Naranjo, Costa Rica’s West Valley. Decades of family know-how and close control from cherry to drying are evident in the cup: it’s precise, sweet and remarkably clean for a yellow honey process.
The variety is San Roque (also known locally as Kenia), a Costa Rican selection closely related to SL-28. You feel that lineage here in the structure and clarity: bright, juicy acidity with well-defined fruit. We’re tasting star fruit and baked pear layered over toffee-like sweetness, finishing long and tidy.
We’ve roasted this lightly for espresso to emphasise clarity and texture. Expect a syrupy shot with high sweetness and crisp definition; it also holds its shape in milk without losing that elegant fruit character.
