With harvest periods throughout the year, a wide range of microclimates and the harvests of small-scale, local producers demonstrated through regional lots, Colombia offers opportunities for creativity, consistency and a wide expression of flavour profiles.

This Gesha varietal, grown by Edgar Ceballes at his farm El Meson in the Huila region, it now only an excellent example of the quality of coffee produced in the Huila region, but it also shows how washed coffees from this area have an incredible clean profile and complex acidity.

During the fermentation process, the cherry is held for 12 hours before being depulped and fermented for 24 hours. The coffee is then dried for 25 days.

Edgar runs Finca Las Palmeras in Garzón close to the original office of Osito, through whom we sourced and purchased this coffee. This is the first year they have been working with Egdar’s coffees, and the second year we have been able to feature them.

We selected this coffee for its complex florality, clean profile and expression of deep fruits. Roasted for filter, enjoy floral notes of bergamot and black tea, as well as a blueberry fruit note throughout the palate.
